The pullets are laying!
Exciting news here on the farm...the pullets are laying. We are thrilled to find a few smaller "practice" eggs. The pullets have been provided a new laying house with cozy nesting boxes in anticipation of lots and lots and lots of eggs.
Pullets?? Chickens who are not fully mature laying hens, but beyond baby chickens...think teenager.
In celebration of more eggs I decided to give out some recipes that we enjoy.
Crustless Quiche:
6 eggs
1/2 cup Italian Bread Crumbs
Splash of milk
Chopped veggies **spinach, red bell pepper, mushroom, green onion, swiss chard are some of our favorites
Cheese * our favorite is feta
Dried or fresh herbs *basil or parsley
Beat eggs with fork, stir in bread crumbs and splash of milk. Fold in chopped veggies and cheese. Bake at 350 degrees in a 8 x 8 pan for 30 - 40 minutes.
***Can be doubled in a 9 x 13 pan.
Chocolate Pudding:
4 cups milk
3/4 cup sugar
1/2 cup cocoa
2 TBSP butter
Place ingredients in saucepan. Cook over medium heat, bring to boil, while stirring.
1 cup milk
7 TBSP cornstarch
In a separate bowl, mix milk with cornstarch. Set aside.
12 egg yolks
2 tsp vanilla
Beat egg yolks with a fork, add in vanilla. Slowly pour mixture into bowl with milk and cornstarch.
After saucepan ingredients are brought to a boil, add in egg mixture. Cook, stirring constantly, about 2 minutes or until mixture is thickened. Pour into bowl to cool, place plastic wrap directly onto mixture and set in fridge to cool at least 4 hours.
