Cheese
I made mention of our making our own cheese from our dairy-goat's milk and several people have asked us about it. We found an incredibly easy recipe for feta cheese. It takes ingredients that you're not going to have around the house, but the recipe article gives you a link to a source for the stuff. We follow her recipe exactly, and you can use any kind of milk, so even if you're stuck with yucky old store-bought cow's milk, you can still make your own passable cheese.
It only takes 15 minutes worth of work in the evening and another 15 minutes worth the next morning. It's that easy. A gallon of milk will make about a quart jar full of feta cheese packed in olive oil, which will keep on the counter for a couple of weeks just fine, and probably in the fridge for ages.

Here's her recipe for cream cheese as well. We make that too, though don't expect it to come out like the square-block stuff you get in the store. It has a little more texture, and quite a bit stronger flavor. We don't call ours "cream cheese", we call it "chevre" and that's more accurate.
