Couscous Salad

My mother-in-law makes a great cold couscous salad.  There are no quantities listed, but it'll taste great any way you make it!

Cook couscous according to directions, but substituting chicken (or vegetable) broth for the water.  Fluff and put in the fridge to chill.

Quarter or halve cherry tomatoes
Chop some green onions
Grate a little raw zucchini

Once the couscous is chilled, stir in all of the veggies, some salt and pepper, a good splash of lemon or lime juice, and if desired, a big handful of feta cheese.  Let sit in the fridge a couple of hours to let the flavors blend.
